Grappa of Chianti Classico is produced from the Sangiovese grape pomace, which is distilled fresh, immediately after racking, at the ancient distillery DOMENIS1898 in Cividale del Friuli.
CELLAR
The Sangiovese grape pomace is distilled fresh, immediately after racking. The distillation plant is artisanal, of the discontinuous type, made of copper, with direct steam, consisting of eight stills. Low steam pressure promotes the extraction of the best aromatic volatile components present in the pomace.
ORGANOLEPTIC CHARACTERISTICS
Color: crystal clear.
Bouquet: intense and clean with pleasant floral and fruity aromas, hints of apple, wild strawberries, ribes and violets.
Taste: warm, balanced and elegant with a fruity long lasting finish.
