Rocca delle Macìe Extra Virgin Olive Oil is produced only with our olives crushed on the same day of harvesting, ensuring unique characteristics and very low acidity. Since the 2012 Harvest, our oil has obtained Organic product certification.
PRODUCTION TECINIQUES
The olives are crushed in the Rocca delle Macìe mill on the same day as the harvest using a continuous cycle method, with a crusher with knives and a variable grid. After crushing, extraction takes place by centrifugation. The speed of the production process immediately after harvesting ensures the preservation of the organoleptic characteristics of this oil and low acidity.
ORGANOLEPTIC CHARACTERISTICS
Color: clear deep gold. Bouquet: fresh and fruity with pleasant notes of hay and olive. Taste: smooth and well balanced with note of artichoke.
